Pacific salmon can have some pretty gnarly teeth during certain phases of their lifecycle, which is something most anglers are aware of. Some of the Pacific salmon's teeth can be very sharp, contrary to popular belief.
Don't cut off the stems and throw them away because broccoli di rape is supposed to be mostly stems. They are full of flavor and become tender with quick cooking, but first they need a bit of trimming. Remove the thick bottom end of any stems that are joined together by using a paring knife. The leaves attached to the lower parts of the stems should be removed. For certain pasta sauces, slice the stems into shorter lengths.
